Newark’s new ramen spot is opening today for its soft launch.
Noodle Shop & Bar, located at 218 Market Street, joins a restaurant row on the block that includes Dinosaur BBQ, Novelty Burger, Redd’s Biergarten, Mercato Tomato Pie and Chipotle, plus O’LaLa Empandas closer to Broad Street.
Noodle Shop will offer traditional ramen dishes as well as new takes on ramen. There’s “Novelty’s Mac N Cheese,” which combines a chicken broth-based ramen bowl with a homemade cheese sauce topped with parmesan cheese, scallions and bacon, and the “Mercato Carbonara,” which includes parmesan cheese, sautéed onions and black pepper. Jersey-based Sun Noodle will be the sole distributor for Noodle Shop’s ramen.
Noodle Shop won’t serve alcohol during the soft opening period, but when the bar debuts, the restaurant will boast a full bar that includes a sake selection and more than 30 draft beers. Their beer list will include brews from Japan in addition to other international and craft beers.

The restaurant’s interior sports large screen televisions and repurposed barnwood floors, plus a solid oak bar and matching stools. A private dining area intended for events can hold up to 40 people.
Noodle Shop will be open Monday through Friday from 11 am to 7 pm for the soft opening. When the eatery announces its formal opening, the restaurant will be open daily and hours will extend to 1 a.m.
